The ULTIMATE Taco Tuesday

Today is truly the ULTIMATE Taco Tuesday. It’s Cinco de Mayo on a Tuesday! Considering Reid and I eat Mexican food approximately 6 nights a week, I thought it would be appropriate for me to share a yummy fish taco recipe we have! We, admittedly, borrowed it from my in-laws, who do it with shrimp. Which is also fantastic! We just happen to have some mahi in the freezer and wanted to use with that. Buen Provecho!

1 1/2 T olive oil

4 t lime juice

1/4 t cumin

1/4 t paprika

1/4 t ground red pepper

1 lb fish (or shrimp, peeled and deveined)

1/3 cup sliced green onions

1/8 t salt

1/2 t grated lime rind

1 Granny Smith apple, peeled and shredded

1 jalapeno pepper, minced

tortilla shells

crumbled feta

sour cream


Combine 1 T of olive oil, 2 t lime juice, cumin, paprika and red pepper in a bowl. Add the fish (or shrimp) and marinate in the refrigerator for 15 minutes.

Combine 1/2 T olive oil, 2 t lime juice, green onions, salt, lime rind, shredded apple and jalapeño. Toss together.

Grill the fish (or shrimp). Grill the tortillas until they are slightly brown.

Serve with slaw, feta and sour cream.
